| Chef Eddie Sandoval offers sushi, Thai, Asian dishes

Eddie Sandoval, owner of The Asian Palate, hopes to bring a new flair in dining to the community with his sushi, Thai and other Asian dinners served at the Evergreen Café Wednesdays through Saturdays in the evenings.
Sandoval said his goal is to create a place where people of Buena Vista can go for "great food, quality service, all-around consistency and a casual atmosphere."
He prepares comfort foods from different Asian communities with all fresh ingredients. The fish is shipped in fresh from Honolulu. Thai foods are prepared with Thai curries, coconut milk and noodles or can be stir-fry. For the curry dishes, the choices may be chicken, pork, beef tenderloin and shrimp. Vegetarian options are available.
Sandoval said he is tying to get a feel for what the people in the community want and cater to this. He said he was trying to find flavors that everyone will enjoy without compromising what his ideas are. Most notably, he said, his inspiration for cooking came from a former chef he worked with in a Mediterranean restaurant in Boston for four years. He found a new passion for various Asian cuisines during travel to points of Asia. He also worked as a sushi chef for four years in Edwards and, prior to the Mediterranean restaurant, he worked in a very traditional French restaurant in Boston. He was born and raised in Milwaukee and is a first-generation Filipino.
Sandoval is looking at a consistency for serving the various menus at The Asian Palate so starting on Wednesday night, July 9, the menu will be primarily sushi. The Thai and other Asian dishes will be served on Thursday through Saturday nights. Ultimately, he said, he would like to add Filipino and Lao dishes as well. New will be a beer, wine and sake menu when the liquor license comes in a couple of weeks.
"I hope to bring a new flair to the community and would love for everyone to come in and try my food," he said. "This is a good way to tell if I want to open up my own restaurant in Buena Vista," he said.
The Asian Palate's hours are 5:30 to 10 p.m. at the Evergreen at 418 U. S. Hwy. 24 N. Reservations are not necessary, but call 395-8984 if you want to make reservations. Sandoval's wife, Laurie, is a physician's assistant in Leadville. They have lived here full time since February.
